Pineapple filling

Information about product:
The mixture is intended for the preparation of the fillings in short pastry. As the filling includes preservative, it is intended to produce pastry with a durability longer than 5 days. The recipe is designed to facilitate the preparation of the required amount of the filling. The filling is easily workable after hydration and is dimensionally stable. Stability of the filling is ensured by a combination of modified starches and soluble fibre. When baking, it does not change its shape and volume significantly. The fraction pineapple cubes is presented in the filling, due to which the product has a delightful fruity taste, and the nature of the content is supported. The filling has a distinctive slightly sour pineapple taste and its colour accentuated by the addition of ground turmeric.

Dried pineapple, neutral substance (sugar, potato starch, CMC E466, potassium sorbate preservative E202), pineapple aroma, citric acid E330, ground turmeric.

Packaging and storage:
The product is packed in paper bags, 10kg each, consisting of 5 packages, 2 kg each.
Store in a cool and dry place.

Minimum durability is 6 months.

The recipe for 5.8 kg of content:

Pineapple filling    2kg
 Water  3.8l
 Total  5.8kg

Technological process:
Pour 3.8 litre of tepid water on 2 kg of the filling, stir together and let it stand for approximately 8-12 hours.
