Apricot filling

Information about product:
The mixture is intended for the preparation of fillings in short pastry. As the filling includes a preservative, it is intended to produce pastry with a durability longer than 5 days. The recipe is designed to make it easy to prepare the necessary amount of the content. The filling is easily workable after hydration and dimensionally stable. Stability of the content is ensured by a combination of modified starches and soluble fibre. When baking, it does not change its shape or volume significantly. A fraction of dried ground apricots is presented in the content, due to which a fruity nature of the content is emphasised, imparting the product delightful taste. Filling has a distinct accentuated sour apricot taste.

Ingredients:
Dried apricots, neutral substance (sugar, potato starch, CMC E466, potassium sorbate preservative E202), apricot aroma, citric acid E330.

Packaging and storage:
The product is packed in paper bags, 10kg each, consisting of 5 packages, 2kg each.
Store in a cool and dry place.

Durability:
Minimum durability is 6 months.

The recipe for 5.8 kg of content:

 Apricot filling  2kg 
 Water  3.8l
 Total  5.8kg

Technological process:
Pour 3.8 litre of tepid water on 2 kg of apricot filling, stir together and let it stand for approximately 8-12 hours.
