Pear filling

Information about product:
The mixture is intended for the preparation of fillings in short pastry. As the filling includes a preservative, it is intended to produce pastry with a durability longer than 5 days. The recipe is designed to make it easy to prepare the necessary amount of the content. The filling is easily workable after hydration and dimensionally stable. Stability of the content is ensured by a combination of modified starches and soluble fibre. When baking, it does not change its shape or volume significantly. A fraction of dried ground pears is presented in the content, due to which a fruity nature of the content is emphasised, imparting the product a delightful taste. The filling has a distinct sour pear taste with addition of cinnamon and the colour is accentuated by the addition of ground turmeric.

Dried pears, neutral substance (sugar, potato starch, CMC E466, potassium sorbate preservative E202), pear aroma, citric acid E330, ground cinnamon, ground turmeric.

Packaging and storage:
The product is packed in paper bags, 10kg each, consisting of 5 packages, 2 kg each.
Store in a cool and dry place.

Minimum durability is 6 months.

The recipe for 5.8 kg of content:

 Pear filling  2kg 
 Water  3.8l
 Total  5.8kg

Technological process:
Pour 3.8 litre of tepid water on 2 kg of pear filling, stir together and let it stand for approximately 8-12 hours.
